I did my apprenticeship at a company that built equipment for the MOD, but 'Government job' meant a 'homer' and was used to get access to materials without signing for them or to get priority for machining work (and of course extra care taken).
My full-time employer later was a vehicle manufacturer. Such jobs were known simply 'homers'.
Rumours suggested that bodywork repaints were being done on nightshift, and this came to a head when a new range of colours was introduced including a striking bright orange. After the first batch of body-shells had been painted (but before completed vehicles had reached the dealers) one 'turned up' in the employee carpark.
It didn't take long for security to spot it (stupid boy!) and several employees 'left' soon after . . .
